I hope you all have prepared for an amazing week!
I thought it would be fun to share what I meal prepped for this week, I usually don’t meal prep as I get bored easily (lol), but I’ve been pretty busy with wedding planning (75 days away now!), working full time, working on other projects & trying to take care of myself too. I feel like I have a lot on my plate right now so not having to think about cooking dinner or what I’m going to eat the next day is a win!
It took me about 2.5 hours, including cook time & the time it takes to chop & clean your veggies/fruits! It really isn’t bad when you think about it. You probably spend that much time chopping, planning & cooking each of your meals throughout the week anyway.
For those who haven’t meal prepped before here are some tips:
– Go onto Pinterest & pick 2-3 recipes you’ll eat throughout the week
– Pick recipes that won’t make it stressful (ex: I did one in the crockpot, one on the stove, one in the oven so I could be cooking three at the same time)
– Base your grocery list off of the amount of servings you’ll need so you’re not over buying or under buying
– Buy meal prep containers, I recommend glass but if you’re going to get plastic, make sure it’s BPA free!
What I Made
Breakfast: Egg cups + mixed fruit salad
Lunch: Taco bowl
Dinner: Teryaki chicken + veggie bowl
Also want to throw out there that this isn’t all I eat! I always have a post workout shake & 2-3 snacks throughout the day too.
Don’t want anyone thinking I’m not eating enough over here 😉
How I Made It
I followed this recipe for Starbucks Copy Cat Egg White & Red Pepper Bites
I made enough to have 2 each day + a fruit salad. For the salad I mixed together 1/4 c strawberries, 1/4c blackberries, 1/2 banana sliced & 1/2 c red grapes!
For my taco bowl I just followed my own recipe!
I brown 1lb ground turkey with taco seasoning & make cilantro lime rice (1c jasmine rice, 1c cilantro leaves, 3 limes juiced, a few shakes of salt, then 1/2c of water then cook according to package instructions), I’ll put it in my container with fresh pico bought from the store, taco blend cheese, roasted red pepper & red onion, a little light sour cream & taco sauce!
For the Teryaki chicken bowl I followed this recipe here! Super simple! I purchased a pineapple & honey flavored teriyaki sauce & made another batch of jasmine rice according to package instructions. I just had two pots of rice boiling at the same time! I also had my veggies cooking in the oven at the same time as well, I just split my baking sheet in half by having my fajita veggies on one side & my veggies for the teriyaki bowls on the other!
