I’ve been loving chia seed pudding for breakfasts lately. Chia seeds are a little back superfood that are packed full of fiber, calcium, zinc, Vitamins B1, B2, & B3, magnesium, antioxidants, high in Omega-3 fatty acids & are a complete protein!
My favorite way to have this super food is chia seed pudding. When you mix chia seeds with a liquid, they absorb it (they can hold 10x their dry weight!), expanding & together, are turned into a jelly/pudding like texture. I love making tropical pudding with coconut milk & tropical fruits or doing chocolate almond milk with cacao nips, but my favorite lately has been Lemon Blueberry Chia:
Lemon Blueberry Chia Pudding
3tbsp chia seeds
1/2c low sugar almond milk
1 tbsp fresh lemon juice
1/4c fresh blueberries
A few Whole Me Lemon Berry Chia Clusters
1) Mix chia seeds, almond milk & lemon juice in a bowl or mason jar.
2.) Cover/seal. Refrigerate overnight or for up to an hour before serving. It will be a thicker, jelly, pudding like consistency.
3.) When ready to eat, give it a stir & add your toppings!
