Kona Coffee Cinnamon Rolls

One of my favorite breakfasts growing up was always warm cinnamon rolls. I loved waking up on a Saturday & watching That’s So Raven with my sister while my mom made them! To make mom-life easier, we always had Pillsbury cinnamon rolls. There’s never anything wrong with having that sometimes, but it has an EWG food score of 9 (you can look more into that by clicking here.) In short, there is an ingredient concern & processing concern in terms of food health. To put it into perspective, the lower the score, the healthier the food & shorter the ingredient list. A bag of frozen fruit has an EWG food score of 1. Growing up, there wasn’t very much information on nutrition! It wasn’t our parents fault, nobody really understood the importance of looking at ingredient lists back then. You guys know I love creating healthier alternatives to my favorite foods so I’m sharing my adaption of this recipe here!

 

Kona Coffee Cinnamon Rolls:

Ingredients

Rolls
2 3/4c whole wheat flour
2 tbsp stevia
A few shakes of salt
1 Instant Yeast packet
1/2 c almond milk
1/4 c water
3 tbsp vegan butter melted
1 large egg

Filling
3 tbsp vegan butter melted
2 tbsp ground cinnamon
1/3 c light brown sugar

Icing
1c powdered sugar
1/2 tsp vanilla extract
3tbsp Kona Coffee

Directions

1.) Whisk together flour, stevia, salt & yeast in large bowl.

2.) Stir milk, water, egg, & melted butter together in separate bowl.

3.) Add wet ingredients to dry, stirring to combine.

4.) On a lightly floured surface, knead dough for 5 minutes, set aside to rise for 10 minutes.

5.) After 10 minutes roll out dough on floured surface to 14×8 size. Spread butter across dough. Stir together cinnamon & brown sugar & sprinkle evenly on dough.

6.) Roll dough tightly lengthwise, slice into 12-14 rolls.

7.) Place into sprayed casserole dish, touching.

8.) Cover rolls with aluminum foil & let rise for 60 minutes. (I learned a trick from the link above to preheat the oven to 150º, put the rolls in, turn the oven off & leave the door cracked for 30 minutes. After 30 min close the door & allow them to rise in the oven for another 30).

9) After rising, take the rolls out, preheat the oven to 375º, uncover rolls & bake for 20-25 minutes or until golden brown.

10.) Whisk together icing ingredients & slowly pour over your rolls.

11.) Enjoy!
