Goooood morning! Currently am in bed, on a Sunday, snowed in.. like it’s been snowing since 9PM.. FRIDAY. Haha Minnesota winters are no joke! I’m not looking forward to shoveling my car out when it’s done. Anyway, I was planning to do “Smoothie Bowl Sundays” on my Instagram weekly but honestly, I decided to switch it this week to an Oat Bowl Sunday because BRR. This one takes less than 10 minutes to put together, making it easy any day of the week!
Winter Oat Bowl
Ingredients
1 packet Better Oats of choice (I like this brand because it’s low sugar)
1 honey crisp apple thinly sliced
1 tbsp vegan butter (or butter of choice)
1 tsp vanilla extract
1/2 tsp pumpkin spice
1/4 tsp nutmeg
1/8 tsp ginger
Toppings
1 tbsp Peanut Butter
drizzle of honey
Directions
1) Cook your oats according to package instructions
2) Heat up the butter on a skillet pan over medium heat
3) Thinly slice your apple & add it to your pan of melted butter
4) Stir in your vanilla extract, pumpkin spice, nutmeg & ginger
5) Cover & cook over medium-high heat until soft (about 5 minutes)
6) Once your apples have softened, add them to your bowl of oats, top with peanut butter & a drizzle of honey! Feel free to add other toppings like granola or a banana!
