I’m currently typing this up waiting for my Digiorno Cheese Stuffed Crust pepperoni pizza to cook & Hocus Pocus to come on FreeForm! Anyway, to kick off day one of my favorite month, here is a pumpkin protein bread recipe for you! Enjoy 🙂
Makes 10 slices
1 1/4 cup whole wheat flour (or flour of choice)
2.5 scoops Cinnamon Cookie Batter Level-1 Protein (No protein? Just add an extra 3/4 cup of flour!)
1/2 cup Light Brown Sugar (or Stevia brown sugar)
6 packets of Stevia
1/2 tsp baking powder
1/2 tsp baking soda
1.5 tsp pumpkin pie spice
2 eggs (or 1 tsp apple cider vinegar for vegans!)
1 cup pumpkin puree
1 tsp vanilla extract
1/4c butter melted (I’ve been using Smart Balance dairy free)
1/3c stevia powdered sugar (or regular powdered sugar!)
1 tsp vanilla almond milk
1/8 tsp vanilla extract
1.) Preheat oven to 350º
2.) In a large bowl mix together dry ingredients, then wet ingredients in separate bowls & combine until a dough forms. Feel free to add more almond milk by the tbsp if needed
3.) Spray non stick spray onto your bread loaf pan & add your mixture!
4.) Put in the oven & bake for 50-65 minutes (it’s done when a knife/fork comes out clean)
1.) Mix together your icing ingredients, sometimes I’ll add more powdered sugar or a liiiiitle bit of more almond milk if needed to get the proper consistency. Drizzle over your cooled bread
Notes: Feel free to use Level 1’s Pumpkin Spice Latte flavor for a more pumpkin flavor!
