Hello! Welcome back to another recipe! I’m so happy it’s grilling season & a perfect way to kick it off is with this simple recipe! We’ve been grilling peppers lately & recently had fajitas so I thought it would be perfect to combine them try out shrimp fajita kabobs. This one is so simple & perfect to whip up before Bachelorette Monday π Who else is watching?!

Simple Shrimp Fajita Kabobs
Ingredients
Β 1lb uncooked shrimp (peeled)
1 yellow onion cut into medium size chunks
5 bell peppers cut into medium size chunks
Low sodium fajita seasoning packet
1.5 tbsp olive oil
Bamboo skewers
Directions
1.) While the grill is heating up, mix together bell peppers, onions, 1 tbsp olive oil & 3/4 of the seasoning packet in a large bowl.
2.) Mix together shrimp, the rest of the olive oil & the rest of the seasoning packet in a separate bowl. (You can use the same bowl, but I have a thing about uncooked animal protein touching my pure & clean veggies lol)
3.) Start stacking your veggies & shrimp on the bamboo skewers! I did three shrimp per skewer.
4.) Place on the grill for 8-10 minutes or until shrimp is fully cooked.
You’re done!
Makes 10 skewers.
*I chose not to soak my bamboo skewers & had no issues with them burning on the grill but you can do as you please π
