Today it’s raining, gloomy & was actually snowing this morning here in Minnesota. Basically I’m over it & I thought this recipe would be perfect for anyone craving sunshine & tropical vibes. This recipe is a lot easier than it may sound & will take you around 20 minutes to make!
3 eggs, 1 egg white (For vegans mix 1tbsp ground seed + 3 tbsp water per egg needed!)
1/4c coconut milk
1/2 tsp stevia
1/2c mango diced
8 slices whole wheat bread or bread of choice
1 tbsp coconut flakes
1.) Whisk together eggs, coconut milk & stevia.
2.) Dip each bread slice into the mixture until fully coated & place on a heated skillet or pan.
3.) Cook until both sides are fully cooked, slightly brown.
4.) Once each slice is cooked, cut in half if desired.
5.) Top each slice with mango, coconut flakes & syrup of choice!
