Hello! It’s been a minute since I’ve posted on here, if you’ve been following my Insta, you know I was dealing with jet lag for a week after Hawaii, got sick for two weeks which included my first sinus infection (yay), then moving to our new place! I’m excited to show you guys a home tour when we have everything set up, we still have to get a dining room table & chairs & some outdoor furniture. But we’re loving the new place!
Yesterday we celebrated Brian’s 24th complete with a good dinner & a homemade Hula Pie! Hula Pie is a popular Hawaiian dessert with a cookie crust, vanilla ice cream, chocolate sauce, macadamia nuts whipped cream & sometimes coconut! We had it a couple times in Hawaii last month! My favorite was the coconut one pictured below!
It’s one of the yummiest desserts you’ll ever have but 100% not healthy haha. I decided to create my own & make it vegan even! Recipe below!
Oreo cookie crust or crust of choice
4 pints So Delicious Vanilla Bean “Ice Cream”
1/2c Enjoy Life mini chips
1/4 tbsp olive oil
2 tbsp chopped macadamia nuts
1.) Evenly layer the ice cream on your crust. Dairy-free ice cream melts a lot more quickly so I layered 2 pints then froze it for 15 minutes then layered the last 2!
2.) After layering all of your ice cream, throw back in the freezer & melt the chocolate chips in a dish with the olive oil, melt in 20 second increments. Once melted, take your pie out of the freezer & drizzle on top!
3.) Sprinkle your macadamia nuts on top & add some whipped cream & you’re done!
You can add coconut flakes, more Oreos on top or whatever you like!
