I love meals that are healthy, taste amazing & that I can throw together so I’m giving you 3! The first is vegan, the last two, pescatarian!
5 Minute Vegan Protein Pasta
Makes 6-8 servings
1 box Yellow Lentil Pasta
1 jar Mur Grein Roasted Red Pepper & Tomato Sauce or Victoria Vegan Sauce
1 package Italian Tofurky Sausage
1 bag Spinach
Drizzle of olive oil
1.) Cook pasta according to box instructions
2.) Heat up your drizzle of olive oil in a pan & throw in your bag of spinach, stir & cover. Spinach is done when it is soft & shriveled
3.) Slice your tofurkey & heat in the microwave for 30-45 sec
4.) Drain your pasta & mix in your spinach, tofurkey & sauce!
Feel free to add more spices, The tofurkey is very very flavorful so it was still good without any! I paired mine with some little breadsticks 🙂
20 Minute Coconut Shrimp Bowls
Makes 4-6 servings
2 Northern Chef Coconut Shrimp bags (I buy mine at Fresh Thyme!)
2 c Jasmine Rice
1 c diced pineapple
1/2 c edamame (thawed)
1.) Cook your 2c of jasmine rice according to bag instructions
2.) Cook shrimp according to bag instructions
3. Dice your pineapple while shrimp & rice are cooking!
4.) Thaw your edamame if not already 🙂 I thaw mine in the microwave!
5.) One rice is done, mix in your pineapple & edamame
6.) Slowly fold in your shrimp! They should be crispy, but you don’t want to risk breaking the coconut coating.
7.) Slowly stir in the Thai Chili Sauce that comes with your shrimp!
20 Minute Ahi Tuna Poké Bowls
Makes 4-6 servings
*Poké is raw, uncooked fish & should NOT be refrigerated to eat the following day*
1 bag Atlas Bay Ahi Tuna (Thawed, I buy from fresh thyme but you can buy any ahi tuna!)
1 head broccoli
1 bag edamame (thawed)
1 c pineapple
2 c jasmine rice
1.) Cook 2c jasmine rice according to bag instructions
2.) Steam broccoli either over the stove or microwave
3.) chop your pineapple & thaw your edamame in the microwave if not already!
4.) Once rice is done, stir in your broccoli, edamame, & pineapple
5.) Stir your Ahi Tuna IN A SEPARATE BOWL with the sauce packaged with it (Stirring in a separate bowl allows you to save the rice mixture if there is some leftover :))
6.) Fill your bowl with rice mixture & top with ahi tuna!
