Currently we’re in the middle of a Polar Vortex, Brian had no med school classes the last two days (which they NEVER cancel by the way!) & I had no work aka.. I got to stay home from my 8-5 job & spent my time creating recipes, more blog & video ideas, etc, which I LOVE! But while I love creating, there are few things I love more right now than looking at photos & videos from our previous vacations.
We’ll be in Maui in 6 weeks & I am counting down the days. If you follow me on the ‘gram, (@fitblondeandfabulous) you already know that I’ve been making lots of tropical recipes: coconut shrimp, mango smoothie bowls & we’re even having poké tonight!
For breakfast this week, we’ve been having Papaya Boats! I saw this idea originally on Pinterest.. People were filling them with fruit! I thought about how to really make it a meal by having a healthy balance of carbs, proteins & fats & thought about filling the boat with chia seed pudding! Not only are you getting protein + fat from the chia seeds, you’re also getting fiber, omega-3s & other vitamins! So I give you my:
Papaya Breakfast Boats
1/4 c chia seeds
1/2 c coconut milk (I use Silk brand!)
1/2 c blueberries
1 tbsp unsweetened coconut flakes
1. ) 30 minutes before you’re reading to eat (or the night before) fill a cup/glass/smaller Tupperware with chia seeds & coconut milk, stir, cover & set in the fridge! The chia seeds will absorb the liquid & it will take on a pudding – like consistency.
2.) Once chia pudding has set, cut your papaya down the middle lengthwise & scoop out the seeds, this will create your “boat”! Cut your mango as well!
3.) Fill your papaya with equal parts of the chia seed pudding
4.) Top it all off with fresh mango, blueberries & sprinkle coconut flakes on each!
