Easy Vegan Cinnamon Rolls

Do you remember waking up on a Saturday morning to the smell of Pillsbury cinnamon rolls wafting through the house? ME TOO. Those were the best mornings. My mom would make us warm cinnamon rolls, we would have our Juicy Juice (90s kids will know) & watch the local channel, ABC, because old school Disney Channel type shows were on!

Now that it’s 2019 & we’re health conscience, Pillsbury cinnamon rolls aren’t exactly something I choose to put into my body anymore.. added sugar, preservatives, chemicals.. they were yummy but no thanks.

My thing is.. just because my health is a priority, doesn’t mean that my favorite foods should be off limits! I just love creating healthier options for them!
So I give you..
My Healthy Vegan Cinnamon Rolls!
These yummy rolls only took me 20 minutes to make, which thank God because I had to make them a couple times to perfect them! These treats have no added refined sugar, chemicals or crap & are SO GOOD. Even approved by my boyfriend who loves his junk food as much as his healthy food!

Recipes makes 9!
Ingredients
Dough
2 cups flour of choice (whole wheat (what I used) , coconut, quinoa)
2 1/2 tsp baking powder
3 shakes Himalayan pink salt
3 tbsp stevia or truvia
5 tbsp dairy free butter melted (I use smart balance olive oil based, but earth balance is good too!)
3/4 c vanilla almond milk

Filling
1 tbsp dairy free butter melted
3 tbsp stevia or truvia
2 tsp cinnamon
1tbsp stevia brown sugar (light brown sugar works too!)

Icing
1/4 cup stevia powdered sugar (regular powdered sugar works too!)
1/4 tbsp vanilla almond milk
1/8 tsp vanilla extract

Directions
1.) Preheat oven to 400 degrees F & grease your baking dish (I used a 9×9)
2.) Mix together all dough ingredients in a large bowl & set aside
3.) In a separate bowl, Mix together all ingredients for filling except your final tbsp of butter
4.) Flour your counter/cutting board & Flatten your dough in a rectangle between 1/8-1/4 inch thick
5.) Melt your final tbsp of butter & spread across your dough.
6.) Sprinkle your filling mixture evenly across dough.
7.) Roll your dough starting on the long side, do this slowly so it doesn’t stick to your counter/cutting board.
8. Once rolled, cut your dough into 9 even pieces & place in your greased baking dish!
9. Bake for 10-12 minutes.
10. Mix your icing ingredients together & when the rolls are done, spread your icing & serve right away!

*I needed to add more almond milk to my icing when it sat for a bit, I just did it 1/4 tbsp at a time! You can add maple syrup to make a bit sweeter if you desire!
