Shrimp Stir Fry in a Pineapple Glaze

This is a yummy, simple recipe that took me only 25 minutes to make! Perfect for a busy night or something to easily meal prep if you’re into that!

Recipe serves 4, but can easily be doubled!

Shrimp Stir Fry in a Pineapple Glaze

1 c jasmine rice
2 c water
1 lb shrimp (I buy wild caught, but you can use frozen/farmed)
10oz bag frozen mixed veggies
1/2 c pineapple juice (no sugar added! I love Dole)
1/2 c fresh chopped pineapple (can use canned, but make sure there’s NO added sugar)
1/4c green onion (optional but I love these, that’s why there’s a lot!)
1/4 c coconut aminos (can use soy sauce, but coconut aminos is low sodium & healthier!)
3.5 tbsp light brown sugar
1 tbsp ground ginger
1.5 tbsp coconut flour
A little salt & pepper

1.) Rinse the jasmine rice & put into a pot with 2 cups of water. Bring to a boil, then let simmer, covered. This should cook within 20 minutes.

2.) In a small sauce pan, add in your pineapple juice, coconut aminos, light brown sugar, & ground ginger. Stir & put on low. After about 5 minutes, slowly add in your coconut flour by the tbsp, I only used 1.5, but if you need more, feel free! This will just help thicken it up! Let mixture simmer, covered.

3.) Throw your bag of veggies in the microwave! Usually takes 5-6 minutes.

4.) In a fry pan, top your shrimp with desired amount of salt & pepper, sauté with a little olive oil until cooked through. If you’re using frozen, make sure it’s fully de-thawed.

5.) When rice is done, fluff with a fork. Stir in shrimp, veggies, pineapple & green onion. Once they’re fully mixed, slowly add in your glaze, stirring as you add!

6.) Done! Makes 4 delicious servings!
