Best part about fall baking? The house smells amazing. I’m always craving something sweet in the mornings & lately, I’m always craving pumpkin because #basicwhitegirlsproblems. So I created this yummy recipe for you to have for breakfasts, snacks & even dessert! I honestly could’ve made this healthier by using Stevia brown sugar & oat flour or even coconut flour, but I understand that those things are pricey & not everyone has access to those things as well! If you have them, go ahead & use them! I tried to make this recipe perfect for anyone to make using items they might already have!
1 1/4 cup whole wheat flour (or flour of choice)
3 scoops vanilla Tone It Up Protein (No protein? Just add an extra 3/4 cup of flour!)
1/2 cup Light Brown Sugar (or Stevia brown sugar)
6 packets of Stevia
1/2 tsp baking powder
1/2 tsp baking soda
1.5 tsp pumpkin pie spice
1 cup pumpkin puree
1 tsp vanilla extract
1/2c dairy free butter melted (I use Smart Balance)
1/4 dairy free butter melted (I use Smart Balance)
2 tbsp light brown sugar (or stevia brown sugar)
4 packets of stevia
3 shakes of cinnamon
5 tbsp flour (or protein powder! I ran out so I opted for flour :))
1.) Preheat oven to 350.
2.) Mix together all dry ingredients in a large mixing bowl.
3.) Mix butter, vanilla extract, pumpkin & egg in a separate bowl.
4.) Add all ingredients together.
5.) Spray a muffin tin with non stick spray & fill 12 muffin cups with batter.
1. Mix together all ingredients, consistency should be chunky.
(mixture should be watery before adding flour/protein powder, add flour/protein powder by the tbsp until you reach desired consistency, I just ended up using 5 tbsp)
2.) Sprinkle the streusel on top of each muffin!
(This will look like a lot, but your muffins with rise so use all of it! Or save some to eat on it’s own because it’s THAT good 😉
Bake for 25 minutes & enjoy!
