Pumpkin Pie Protein Muffins

I told myself I was going to wait on posting something pumpkin.. but I couldn’t help myself. Minnesota is already starting to feel like fall & I’m loving every second of it! I knew I wanted to make something that was easy to snack on as I start my new full time job this week. These muffins are perfect to throw in your bag as a snack or something to grab from the fridge to tide you over until dinner.
This recipe is so simply & easy you’ll be making it until Thanksgiving.

Pumpkin Pie Protein Muffins
Serving Size: 2 muffins
Recipe makes 12

2 cups Kodiak Cakes Buttermilk Mix
1 cup pumpkin puree
2 tsp vanilla
1 tsp pumpkin pie spice
1 tsp cinnamon
2 packets of Stevia
1/2 cup water

1.) Preheat oven to 325
2.) Mix all ingredients together in a bowl (add more water
3.) Lightly spray a muffin tin with non stick spray & add batter to 12 muffin cups
4.) Bake for 20-30 minutes or until toothpick comes out clean
5.) Top each muffin with Stevia Brown Sugar or light brown sugar
