Biscuit Taco Cups

Welcome back to the blog & welcome back to another recipe! I stumbled across this idea via Pinterest which was linked to a recipe on Pillsbury’s website. I thought it sounded amazing. Plus, it looked easy & shouldn’t take more than 30 minutes to make. Which is perfect for anyone who is busy & also for any family whose kiddos are in school/sports. No one wants to or needs to spend more than 30 minutes making dinner! Once I clicked on the recipe (you can find the original here), I looked at the Nutrition Facts, which I honestly love that Pillsbury does, BUT my thoughts were… No way. There’s gotta be a healthier way to make these. So I decided to recreate the original recipe using healthier & lighter ingredients! They turned out amazing, but obviously, credit goes to Pillsbury for thinking of this idea first! At the end of my recipe, I’ll list the difference in calories, macros & sodium compared to Pillsbury’s!

8 Servings | Serving Size: 1 Cup
Ingredients
1 lb 93% lean ground turkey
1 packet low sodium taco seasoning (I used Taco Bell Reduced Sodium)
1 can refrigerated flaky jumbo biscuits 8 count (I used Great Value)

Toppings (amount per cup)
1/4 c Lettuce
1 tbsp Shredded Cheese
1 tbsp Fresh pico
1/2 tbsp Light Daisy Sour Cream

Directions
1.) Preheat oven to 375 degrees
2) Turn over a muffin tin, spray the bottom & sides of 8 cups with non stick spray & mold each biscuit over the bottom of each muffin cup. It helps to flatten each biscuit & lightly spread apart the dough (without ripping it) before molding it over the muffin cup.
3.) Bake for 12-15 minutes until golden brown.

4.) While biscuits are baking, brown turkey in skillet on medium-high heat.
5.) Once browned, drain & add in taco seasoning & follow directions on packet

6.) When biscuits + ground turkey are done, remove biscuits after allowing to cool for 5 minutes & spoon meat into each biscuit equally.

7.) Add your toppings & you’re done!
