Do you remember going to IHOP or Perkins with your family as a kid, ordering pancakes the size of your face & drowning it in delicious syrup? Sweet, sugar – filled breakfasts were always & still are my favorite! But as kids, we don’t think about the sugar and additives thrown into those syrups! Now that we’re adults & make health a priority (hopefully ;)), we truly should watch the amount of sugar we put into our bodies. Too much sugar can lead to diabetes, fatigue (sugar crash), skin breakouts, negative affects on your insulin & leptin levels, which can cause your body to store more fat and so on. It’s important to keep your sugar intake to whole foods like fruit & to watch your product labels. Companies can sneak sugar into yogurts, protein bars, granola bars, & even some crackers. The recommended daily intake of added sugar for females is 25g & for males, 37g per day (American Heart Association). Take note that I said, added sugar, not natural sugar. Natural sugar is going to be found in your fresh fruits & contain essential vitamins to keep you glowing & healthy! So eat up & don’t stress when it comes to your fruits & natural sugars! Added sugar is going to be things like high fructose corn syrup & cane syrup. Always check your labels! I’m big into creating healthier alternatives for foods that I love & I’m pretty proud of this one. I promise you that you’re going to love it for your pancakes!
Healthy Blueberry Pancake Syrup
1/4 unsweetened almond milk
1.5 tbsp quinoa flour
1/2 fresh lemon squeezed
1/2c fresh blueberries
1 packet stevia
-In a small pot, bring almond milk, lemon juice & stevia to a boil
-Reduce to a simmer & add in blueberries, honey & quinoa flour
-Cover & stir occasionally
-Syrup is done when it is thickened, berries are soft & taken on a purple hue (6-7 min)
(If you want a strong lemon flavor, add in lemon zest or more fresh lemon juice!)
-Pour on top of pancakes!
Makes 2 servings of syrup, but I honestly used it alll for myself 😉
