I know I’m not the only one who loves spending time making a delicious, healthy breakfast. I always make sure to have a lot of carbs in the morning to keep me going until lunch! Incorporating quinoa into my breakfast has become a new favorite. What is quinoa? Pronounced “keen-wah” is an ancient superfood that cooks & looks like a grain, but is actually a seed! Quinoa contains all 9 essential amino acids, making it a complete protein. Perfect for my vegan & vegetarian friends! Quinoa has a ton of other health benefits including a high antioxidant content, iron, magnesium, zinc, potassium, B – vitamins & has a high fiber content. The combo of high fiber & protein give this seed a low glycemic index compared to grains. I love substituting pasta & rice for quinoa in the evening to keep my blood sugar levels from spiking! Since incorporating quinoa into my breakfasts in place of oats, I’ve been playing around with different recipes that I’ve been loving, so here are three you can try!
Berry Nut Quinoa Bowl
1/2 c uncooked quinoa
1c unsweetened almond milk
A few shakes of cinnamon
Packet of stevia/truvia
Berries of choice
1Tbsp Peanut butter
Handful of almonds (not pictured)

-Cook quinoa according to package instructions with almond milk
-Stir in cinnamon & stevia/truvia
-melt tbsp of peanut butter in microwave safe container
-once cooked, place into a bowl & top with berries of choice, more cinnamon, peanut butter and almonds!
Sweet Berry Quinoa Bowl
1/2 c uncooked quinoa
1c unsweetened almond milk
A few shakes of cinnamon
Packet of stevia/truvia
2tsp stevia brown sugar
1 tbsp low sugar syrup
Berries of choice

-Cook quinoa according to package instructions with almond milk
-Stir in cinnamon, stevia/truvia, stevia brown sugar & syrup
-Place into a bowl & top with berries, more cinnamon & drizzle with syrup
Apple Cinnamon Quinoa Bowl
1/2 c uncooked quinoa
1c unsweetened almond milk
A few shakes of cinnamon
Packet of stevia/truvia
2tsp stevia brown sugar
1 tbsp low sugar syrup
1 small apple
Granola of choice

-Cook quinoa according to package instructions with almond milk
-Stir in cinnamon, stevia/truvia, stevia brown sugar & syrup
-Thinly slice apples & saute in a little coconut oil or butter until soft
-Pour into a bowl, top with apple slices, more cinnamon, & granola.
(I used a little melted low sugar caramel to drizzle on top!)
