After getting back from Maui last month, I realized I wanted to live as the islanders do, simple. I wanted to incorporate that with everything, my clothes, my makeup (see my minimalist makeup routine here), my workouts, & even with my food. We were never meant to live a complicated, crazy life & being students, working full time or even with myself living in the city, it’s difficult to get away from that. I’ve begun to make my foods from inspiration of what we ate in Hawaii. Everything was clean, simple, & healthy for you, but had lots of flavor. I’ve been experimenting with different sauces, herbs & spices so I give you:
Hawaiian Teriyaki Skewers
Ingredients:
2 lb package of chicken or veggies for my vegetarians
20 oz diced pineapple or 1 can Dole Pineapple chunks
1/2 c Soy Yay Island Teriyaki sauce (pictured)
1 cup Jasmine rice
1/2 squeezed lime
Chopped fresh Parsley leaves
16 bamboo skewers
Directions:
Dice chicken/veggies & cook in a little evoo + salt & pepp
Cook Jasmine rice according to package instructions
Once chicken is done, mix in teriyaki sauce
Add fresh lime juice to rice once cooked & fluffed
Using the skewers, alternate chicken + pineapple chunks (4 pieces chicken, 4 pieces pineapple)
Serve on Jasmine rice & top with fresh Parsley
